About the Business

Eric's Fudged Confections was conceived when the owner, Eric, read the Cottage Food Act as research for an open-ended persuasive essay in February of 2013. The fudge recipe had always been popular among friends and family, but it was impossible to make a business out of it until this law passed. Now, Eric's Fudged Confections is a fully licensed food business that sells online and occasionally at a fair or event.

About the Recipe

The fudge recipe that Eric's Fudged Confections uses has been handed down through at least three generations, with tweaking and fine-tuning each step of the way. It uses high-quality dark chocolate, specially selected marshmallows with fewer strange chemicals (experiments with homemade marshmallows are underway), and a secret method of sugar preparation that results in the smoothest fudge you will ever taste.

About the Owner

Eric is an 18 year old Livermore resident who has been homeschooled his entire life. He enjoys cooking (especially dessert), and grew up making fudge as holiday gifts every year. His passion is engineering, but he hopes to gain experience in business, not to mention lots of fudge, with this venture.

About the Cottage Food Act

The Cottage Food Act legalizes the sale of foods prepared in a home kitchen, instead of only those prepared and packaged in expensive commercial kitchens, and allows Cottage Food Operations, as they are called, to bypass much of the paperwork and fees that are otherwise required for selling food. The Cottage Food Act passed in California in late 2012, and was enacted in January of 2013, and since then has allowed for the creation of many small businesses which could not have succeeded while paying for a commercial kitchen.
